Sous Chef / Head Chef – Gourmet Sandwich Concept (Lisbon)
We are a fast-growing gourmet sandwich concept in Lisbon, focused on high-quality ingredients, in-house production, and creative, chef-driven recipes. Everything we serve is made from scratch, with a strong emphasis on flavour, efficiency, and consistency.
We are looking for a highly motivated Sous Chef / Head Chef to work directly alongside the founder, helping to lead the kitchen, structure operations, and take ownership of daily back-of-house performance.
Key Responsibilities
- Lead daily kitchen operations alongside the founder
- Organize and execute batch production and mise en place
- Maintain high standards of quality, consistency, and cleanliness
- Manage inventory and stock control
- Handle supplier communication, ordering, and deliveries
- Monitor and manage daily cost control (food cost, waste, margins)
- Create and implement prep lists, checklists, and kitchen systems
- Support team leadership, training, and scheduling
- Contribute to menu development and recipe creation
- Continuously optimize workflows and kitchen efficiency
What We’re Looking For
- Strong experience in a professional kitchen (Sous Chef or above preferred)
- Solid understanding of kitchen operations and organization
- Experience with inventory management and cost control
- Ability to lead a small team and take initiative
- Structured, reliable, and detail-oriented
- Passion for food, creativity, and high-quality execution
- Comfortable working in a fast-paced, hands-on environment
