Opening in late 2026, The Standard, Lisbon marks our long-anticipated arrival in one of Europe's most happening cities. Located at Palácio Santa Clara, the hotel rises above the colourful alleyways of Alfama, Lisbon's most picturesque neighbourhood, offering front-row views of the river. Built atop the ancient College of St. Francis Xavier, which served as the Portuguese Royal Navy Hospital for over 200 years, the property is being reimagined by acclaimed architect Samuel Torres de Carvalho. His design respects the building's heritage while looking ahead to a bold, unconventional Lisbon.
Anchored in food, music, art, and culture, The Standard, Lisbon brings our signature design and experience-driven philosophy to Portugal. With 165 guestrooms and 24 adjacent apartments, the expansive property features vibrant spaces for day and nightlife programming. The ground floor welcomes guests and locals with a lobby lounge, pharmacy bar, all-day dining restaurant, and multiple terraces, gardens, and a pool deck. Upstairs includes a café, spa, gym, and event spaces. The rooftop bar and terrace are poised to become a neighbourhood destination.
As we enter our pre-opening phase, we're now looking for a Pastry Chef to join our kitchen leadership team and help shape the sweet side of our culinary vision.
This role will report directly to Executive Chef, Fer Serrano, who’s globally influenced, ingredient-led approach will define the culinary identity of The Standard, Lisbon, promising an experience that is truly Anything but Standard.
Your Role
Our Restaurants, Bars, Clubs and Rooftop terraces are legendary, and The Standard is recognised worldwide as a beacon for unforgettable dining and nightlife experiences. As our Pastry Chef, you will lead the pastry operation at The Standard, Lisbon, creating exceptional desserts, breads, viennoiserie, cakes and baked goods across multiple food and beverage outlets while supporting seasonal events and bespoke guest experiences.
This is a hands-on leadership role where creativity, precision and consistency are equally important. Working closely with the Executive Chef and wider kitchen leadership team, you will oversee the day-to-day pastry operation, ensuring every product reflects the quality, originality and attention to detail that defines The Standard.
You will be responsible for planning, developing and executing innovative pastry menus that evolve with the seasons while balancing creativity with commercial performance. From breakfast pastries and afternoon treats to signature desserts and celebration cakes, you will continuously raise the standard of our pastry offering while ensuring consistency across every service.
Beyond production, you will manage ordering, stock control, food costs and supplier relationships within the pastry kitchen, maintaining exceptional standards of food safety, hygiene and organisation. You will lead and develop the pastry brigade through coaching, training and mentoring, creating a positive and collaborative environment where talent can flourish.
As part of our pre-opening team, you will play an important role in establishing systems, procedures and operational standards, helping to build a pastry department that is recognised as one of Lisbon's most exciting culinary destinations.This is not a "Standard" Pastry Chef role, so you'll need serious stamina and passion, be highly social, upbeat and confident under pressure, thriving in a high-volume, high-energy environment whilst working collaboratively with the wider culinary leadership team.
Do you have what it takes to be our Pastry Chef at The Standard, Lisbon...
Proven experience as a Pastry Chef, Senior Pastry Sous Chef or experienced Pastry Sous Chef within high-volume, quality-driven kitchens, ideally gained within a Lifestyle Hotel, luxury hotel or premium restaurant in Lisbon or Portugal.
